Raised by strong, independent women, Chef Jai’s culinary experience started out sitting on the kitchen countertop, while his mother was baking cake. He has come a long way since then, having worked for some of the biggest names in the Toronto food scene. Shaped by the flavours he encountered in his childhood, his travels and the professional kitchens he was taught in, he always craved a different and unique culinary cohesion.

In the last few years, Chef Jai has been focusing on growing his own company Spike Your Food. Taking simple ingredients and elevating them to unique new levels is at the basis of his new venture. Or as Jai would say: “Only when you truly understand the simplicity of something, can you then make it complex.”

In a world full of fast and meaningless food, Chef Jai has cultivated a philosophy of “slowing down”. While ingredients slowly marinate, smoke or infuse, they absorb the qualities of their surroundings. This kind of approach to the culinary arts results in the most profound flavours and ensures a deeply nourishing experience.
